Coconut Mango Rice with Curry Chicken

I show you my coconut mango rice with curry chicken. The rice is cooked in coconut milk and fresh mangos and then paired with curry chicken — perfect balance of savory and a little sweet.

Ingredients:

  • Short Grained Sushi White Rice (1 1/2 cups)
  • Mango (1 Western mango or 2 Asian mangos, cubed)
  • Coconut Milk (1 13 oz. can)
  • Water (1 cup)
  • Salt (1 teaspoon)
  • Chicken breast (1 lb., cubed)
  • Garlic (3 cloves, minced)
  • Curry Powder (1 tablespoon)
  • Paprika Powder (1 teaspoon)
  • Cilantro (diced)
