Sauted Ramen Noodles with Ground Turkey, Bean Sprouts, Snow Peas & Carrot

I love ramen noodles, but they are not considered healthy because of its high salt content, so I created my own healthy ramen noodles with grounded turkey, ginger, garlic, snow peas, carrots and bean sprouts all covered in a savory sauce, a filling and complete meal.

Ingredients:

  • Ramen Noodles (2 packs, just use noodles and throw away powder packs)
  • Lean Ground Turkey (1 lb.)
  • Snow Peas (1/4 lb.)
  • Carrot (1 piece, julienned)
  • Ginger (2 inches peeled and julienned)
  • Bean Sprouts (4 cups)

Sauce:

  • Soy Sauce (4 tablespoons)
  • Hoisin Sauce (2 tablespoons)
  • Sirracha Sauce (2 tablespoons)
  • Sesame Oil (1 tablespoon)

Instructions:

1) In a small bowl, mix all the ingredients of the sauce and put aside.

2) Slice carrot and ginger into thin julienne pieces and mince garlic.

3) Cook noodle in boiling water

4) Blanch snow peas in boiling water for 40 seconds.

5) Drain water from snow peas and noodles and rinse both in cold water, so you can remove the outside fat from the noodles and stop the snow peas from cooking.

6) In large pan, add little bit of vegetable oil and sauté turkey until it’s fully cooked and transfer to a bowl. Drain any excess water in the pan from cooking the turkey.

7) In same pan, add a little bit of vegetable oil and a) sauté ginger and garlic for 30 seconds,  b) then add carrot and sautee for 1 minute, c) then add bean sprout and saute for 1 minute, d) then add snow peas, noodles and ground turkey.   Add sauce and sauté until all the sauce covers the noodles, turkey and vegetables.
