Thai Chicken Satay with Peanut Sauce

Everyone seems to love Thai chicken satay, so here’s a recipe you can make in your own home!

Ingredients:

  • Chicken  Breast (1 lb. no bones or skin, cubed into 1 inches)
  • Plain Yogurt (1 cup)
  • Curry (1 tablespoon)
  • Paprika (1/2 tablespoon)
  • Garlic (1 tablespoon, minced)
  • Ginger (1 tablespoon, minced)
  • Wooden sticks (6, soak in water)

Peanut Dipping Sauce:

  • Peanut butter (plain smooth, 1 cup)
  • Soy Sauce (3 tablespoon)
  • Hot Sauce (1tablespoon)
  • Fish oil (1 tablespoon)
  • Chili Powder or paprika (1/2 tablespoon)
  • Brown sugar (2 tablespoons)
  • Garlic (1 tablespoon, minced)
  • Ginger (1 tablespoon, minced)
  • Cilantro (1/4 cup, minced)
  • Lime (juices of 2 limes)
  • Water (1/4 cup or 1/2 cup of water if you do not have soy milk)
  • Soy milk (1/4 cup soy milk or use 1/2 cup of water if you do not have soy milk)

Instructions:

1) Soak wooden sticks in water  for about 30 minutes, so they do not burn over the fire.

2) Prepare the marinade for the chicken.  Mix yogurt, curry, paprika, ginger, and garlic.  Add chicken cubes to marinade and let it sit for 2 hours.

3) Prepare the peanut sauce.  Mix in all the ingredients until peanut butter is silky smooth.  Add cilantro right before serving sauce.

4) On wooden stick, and place 4-5 pieces of chicken on each wooden stick.

5) Heat indoor grill and brush with oil so food does not stick.  Lay chicken on stick and cook each side for about 7 minutes each or until chicken is thoroughly cooked.

6) Serve chicken with the peanut sauce.

Serves: 4-6
