Chinese New Year Mung Bean Dumpling Soup!

Happy Chinese New Year!  It’s the Year of the Goat!  In this video, I am joined by my special guest Mrs. Lam, who shows us her very delicious Chinese mung bean dumpling soup to celebrate the New Year!

Ingredients:

Dumpling skin

  • White Sticky Rice powder (2 cups)
  • Tapioca Starch (1 teaspoon)
  • Hot water (3/4 cup)
  • Sugar (1/2 teaspoon dissolved in water)

Dumpling filling:

  • Mung beans (1/2 cup)
  • Vegetable oil (3 teaspoons)
  • Coconut milk (2 tablespoons)
  • Water (1 inch above the mung beans)
  • Vegetable oil (3 teaspoons)
  • Sugar (1 teaspoon)
  • Salt (1/4 teaspoon)

Broth:

  • Water (3 cups)
  • Palm Sugar (3 pieces) (substitute: Brown Sugar ½ cup)
  • Ginger (3-4 inches)
